Whole pig — head to tail — rubbed with lemongrass, garlic, and sea salt, then spit-roasted slow over wood charcoal until the skin crackles and the meat falls. Served on banana leaves with tomatoes and cucumbers, plus house-made lechon sauce, seasoned vinegar, and atchara. Pre-order 5-7 days; based on availability.
